A rich and velvety chocolate mousse dessert made with eggs, butter and cream.
Ingredients
- 100g dark chocolate
- 1 tbs caster sugar
- 2 eggs separated extra large
- 150ml cream
- 2 tsp vanilla essence
- 20g butter
Method

Step 1Break chocolate into squares and place in a microwave safe bowl with the butter. Microwave on high heat for 1 minute then stir.

Step 2Microwave at short intervals (15 seconds), stirring after each time until chocolate is melted, smooth and glossy when stirred. Set aside to cool.

Step 3Place egg whites in a glass bowl. Beat until stiff peaks form. Set aside.

Step 4Place cream, sugar and vanilla in a bowl. Beat until cream has thickened. Set aside.

Step 5Add egg yolks to cooled chocolate mix and beat in lightly.

Step 6Add to cream and beat just until combined. Add this mix to egg white and fold in gently until well combined.

Step 7Pour into individual serving dishes of desired serving size. Place into refrigerator overnight or for at least 1 hour until set. Serve as desired.
Recipe Notes
I use dark chocolate with around 44% cocoa. I use 59g eggs or larger.
Try adding different flavours to the mix as well such as mint, crushed peppermint crisp bars, brandy or coffee.
