A yummy corn flan or quiche.
Ingredients
Base
- 1 cup plain flour
- 1 cup self-raising flour
- 125 g butter
- 1/4 tsp salt
- 1 pinch pepper *to taste
- 1 tbs parsley chopped
- 3 tbs water
Filling
- 2 eggs
- 440 g cream-style canned corn
- 1 onion diced large
- 1 cup cheese grated
- 200 ml cream
Method

Step 1Combine flours, parsley, salt and pepper in a large bowl.

Step 2Rub in the butter with fingertips until mixture resembles fine bread crumbs.

Step 3Blend in water to form a firm dough and refrigerate while preparing filling.

Step 4Mix all filling ingredients together in a bowl.

Step 5Roll pastry out and press into a greased 23 cm flan or quiche tin, trim edges.

Step 6Pour in the corn filling.

Step 7Bake at 200C or 180C fan forced for approximately 50 minutes to 1 hour or until golden and firm to touch in the middle.

Step 8Serve hot or cold.
Recipe Notes
You can substitute corn filling for 250 g bacon diced, 1 large onion diced, 300 mL cream, 3 eggs, 1 cup cheese and pepper.
Mix ingredients together and pour into base, slice 2 tomatoes and place on top.
Sprinkle basil over tomato slices and bake as per corn filling.
