Ingredients

Base

  • 1 cup plain flour
  • 1 cup self-raising flour
  • 125 g butter
  • 1/4 tsp salt
  • 1 pinch pepper *to taste
  • 1 tbs parsley chopped
  • 3 tbs water

Filling

  • 2 eggs
  • 440 g cream-style canned corn
  • 1 onion diced large
  • 1 cup cheese grated
  • 200 ml cream

Method

  • Step 1
    Combine flours, parsley, salt and pepper in a large bowl.
  • Step 2
    Rub in the butter with fingertips until mixture resembles fine bread crumbs.
  • Step 3
    Blend in water to form a firm dough and refrigerate while preparing filling.
  • Step 4
    Mix all filling ingredients together in a bowl.
  • Step 5
    Roll pastry out and press into a greased 23 cm flan or quiche tin, trim edges.
  • Step 6
    Pour in the corn filling.
  • Step 7
    Bake at 200C or 180C fan forced for approximately 50 minutes to 1 hour or until golden and firm to touch in the middle.
  • Step 8
    Serve hot or cold.
Recipe Notes

You can substitute corn filling for 250 g bacon diced, 1 large onion diced, 300 mL cream, 3 eggs, 1 cup cheese and pepper.

Mix ingredients together and pour into base, slice 2 tomatoes and place on top.

Sprinkle basil over tomato slices and bake as per corn filling.
