An easy recipe to make, similar to the one Grandma made.
Ingredients
- 3 cups mixed fruit
- 2/3 cup pitted prunes chopped
- 1/2 cup walnuts chopped
- 1 orange rind
- 1 orange juiced
- 1/3 cup brandy
- 1/4 cup golden syrup
- 2 eggs lightly beaten
- 2/3 cup thickened cream
- 2/3 cup brown sugar
- 1 cup plain flour
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp bicarbonate of soda
Method

Step 1Place mixed fruit, prunes, walnuts, orange juice, rind, brandy and golden syrup in a large bowl and stir to mix well.

Step 2Mix eggs, cream and sugar together, add to fruit mixture combining well.

Step 3Sift flour, cinnamon, nutmeg and soda together and fold into fruit mixture.

Step 4Place mixture in a well greased and lined 5-cup pudding basin.

Step 5Place foil over top of basin, securing with a string and then cover with lid.

Step 6Place pudding in a large saucepan of boiling water making sure water comes halfway up the side of the basin.

Step 7Boil for 5 hours, checking water frequently.

Step 8Boil again for a further 1½ hours before serving.
