Ingredients

  • 500 g turkey mince
  • 1 onion medium finely diced
  • 1 zucchini grated
  • 1 carrot grated
  • 1 cup panko breadcrumbs
  • 2 eggs beaten
  • 1/2 cup fresh mixed herbs
  • 1 cup reduced-fat cheese grated
  • 1 tbs olive oil
  • 2 cups wholemeal pasta shapes

Sauce

  • 250 ml tomato pasta sauce
  • 420 g canned tomatoes
  • 1 tbs olive oil
  • 4 garlic cloves

Method

  • Step 1
    Mix onion, turkey, carrot and zucchini. Combine with egg, panko, cheese and herbs. Roll into small balls.
  • Step 2
    Add olive oil to frypan over medium heat and cook for 5-7 minutes until cooked through. Meanwhile, simmer tomatoes in small amount of olive oil, with garlic and pasta sauce.
  • Step 3
    Bring pan of water to the boil, cook pasta and drain.
  • Step 4
    Serve with pasta, once the sauce has reduced with turkey balls.
Recipe Notes

Mixed herbs: rosemary, thyme, oregano, marjoram.
