Ingredients
- 500 g turkey mince
- 1 onion medium finely diced
- 1 zucchini grated
- 1 carrot grated
- 1 cup panko breadcrumbs
- 2 eggs beaten
- 1/2 cup fresh mixed herbs
- 1 cup reduced-fat cheese grated
- 1 tbs olive oil
- 2 cups wholemeal pasta shapes
Sauce
- 250 ml tomato pasta sauce
- 420 g canned tomatoes
- 1 tbs olive oil
- 4 garlic cloves
Method

Step 1Mix onion, turkey, carrot and zucchini. Combine with egg, panko, cheese and herbs. Roll into small balls.

Step 2Add olive oil to frypan over medium heat and cook for 5-7 minutes until cooked through. Meanwhile, simmer tomatoes in small amount of olive oil, with garlic and pasta sauce.

Step 3Bring pan of water to the boil, cook pasta and drain.

Step 4Serve with pasta, once the sauce has reduced with turkey balls.
Recipe Notes
Mixed herbs: rosemary, thyme, oregano, marjoram.
