Kid-Friendly Salmon and Sweet Potato Patties

Ingredients

  • 2 cups sweet potato chopped
  • 1 cup frozen peas
  • 1 can salmon drained large
  • 2 cups breadcrumbs
  • 4 eggs lightly beaten
  • 2 spring onions thinly sliced
  • 1 tbs olive oil

Method

  • Step 1
    Boil, steam or microwave sweet potato and peas, separately, until tender. Drain and mash the sweet potato until smooth, then mix in peas.
  • Step 2
    Add salmon, 1/3 cup breadcrumbs, egg and spring onions to the sweet potato mixture and stir to combine.

  • Step 3
    Place remaining breadcrumbs on a plate.
  • Step 4
    Shape 1/3 cup salmon mixture into a 2cm-thick patty. Roll in breadcrumbs to coat. Repeat with remaining mixture.
  • Step 5
    Heat the oil in a large non-stick frying pan over a medium heat.
  • Step 6
    Cook patties, in batches, for 2-3 minutes each or until golden.
Recipe Notes

All recipes can be stored easily in a Thermos® FUNtainer® food jar to keep contents hot for up to 5 hours, and cold for up to 7 hours.
