These family favourites developed by nutritionist, Susie Burrell, are packed full of the good stuff, and are perfect for after-school snacks, lunch boxes and dinners - even the fussiest kids will love them.
Ingredients
- 2 cups sweet potato chopped
- 1 cup frozen peas
- 1 can salmon drained large
- 2 cups breadcrumbs
- 4 eggs lightly beaten
- 2 spring onions thinly sliced
- 1 tbs olive oil
Method

Step 1Boil, steam or microwave sweet potato and peas, separately, until tender. Drain and mash the sweet potato until smooth, then mix in peas.

Step 2Add salmon, 1/3 cup breadcrumbs, egg and spring onions to the sweet potato mixture and stir to combine.

Step 3Place remaining breadcrumbs on a plate.

Step 4Shape 1/3 cup salmon mixture into a 2cm-thick patty. Roll in breadcrumbs to coat. Repeat with remaining mixture.

Step 5Heat the oil in a large non-stick frying pan over a medium heat.

Step 6Cook patties, in batches, for 2-3 minutes each or until golden.
Recipe Notes
All recipes can be stored easily in a Thermos® FUNtainer® food jar to keep contents hot for up to 5 hours, and cold for up to 7 hours.
