Vegan Peanut Butter Choc Chip Cookies

Ingredients

  • 1/2 cup coconut flour
  • 2 tbs chia seeds
  • 1/3 cup cashews raw
  • 2 tbs peanut butter heaped
  • 2 tbs maple syrup
  • 1 tsp sea salt
  • 1 tbs coconut oil melted
  • 1/4 cup warm water
  • 1/4 cup dark chocolate chopped

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Add all the ingredients to a food processor, except for the chopped chocolate, and process until the mixture comes together. You will know when the mixture is ready, as it will be sticky enough to hold its shape when pressed. If it is too dry, add a touch more water.
  • Step 3
    Add the chopped chocolate and stir through.
  • Step 4
    Spoon 1tbs of mixture onto a lined baking tray and shape into a cookie.
  • Step 5
    Bake for 12-15 minutes, until golden around the edges.
Recipe Notes

You can replace raw cashews with raw almonds if you prefer.

While most dark chocolate varieties containing over 70% cocoa are free from dairy, not all dark chocolate is suitable for vegans. Check the ingredients before purchase.
