This super simple raspberry basil sorbet is a delicious treat on a hot summer's day.
Ingredients
- 3 cups frozen raspberries
- 1/2 cup sugar
- 1 cup water
- 1 handful fresh basil
- 1 lime juiced
Method

Step 1Combine the sugar and water in a saucepan, bring to a boil and then let simmer for about five minutes. Remove from the heat and allow to cool.

Step 2In a food processor, blend the basil, raspberries and lime juice until smooth.

Step 3Mix the raspberry mixture together with the sugar syrup and place in a plastic container. Freeze until set, about three hours. After the first hour, stir the mixture with a fork, and continue to do this every half hour or so, to give it a lighter texture.

Step 4Serve on its own, or with some fresh seasonal fruit.
