Ingredients

  • 3 cups frozen raspberries
  • 1/2 cup sugar
  • 1 cup water
  • 1 handful fresh basil
  • 1 lime juiced

Method

  • Step 1
Combine the sugar and water in a saucepan, bring to a boil and then let simmer for about five minutes. Remove from the heat and allow to cool.
  • Step 2
In a food processor, blend the basil, raspberries and lime juice until smooth.
  • Step 3
Mix the raspberry mixture together with the sugar syrup and place in a plastic container. Freeze until set, about three hours. After the first hour, stir the mixture with a fork, and continue to do this every half hour or so, to give it a lighter texture.
  • Step 4
Serve on its own, or with some fresh seasonal fruit.
