Ingredients

  • 250 g unsalted butter
  • 1 brown onion chopped
  • 1 tbs olive oil
  • 1 tsp curry powder
  • 2 sprigs thyme
  • 4 anchovy fillets finely chopped
  • 1 tbs capers drained rinsed
  • 1 garlic clove
  • 1 tbs lemon juice
  • 1/4 bunch parsley fresh
  • 1/4 bunch tarragon fresh

Method

  • Step 1
    Heat the olive oil in a frypan over a medium heat.
  • Step 2
    Add the onion and cook for 3-4 minutes.
  • Step 3
    Add the curry powder and cook for 1 minute.
  • Step 4
    Remove from the heat and allow to cool.
  • Step 5
    Add this mix to a blender with all the remaining ingredients and blitz for 20-30 seconds or until combined.
  • Step 6
    Transfer to an airtight jar and store in the fridge.
