Ingredients
- 500 g chicken livers cleaned
- 1 brown onion finely chopped small
- 3 garlic cloves minced
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1/4 tsp nutmeg
- 1/2 cup red wine
- 1/4 cup chicken stock
- 1 sprig rosemary
- 2 sprigs thyme
- 1/2 cup butter
- 1 pinch sea salt
- 1 pinch cracked pepper
Method

Step 1In a frypan, saute the onions and garlic with the liver, until the livers are browned and onions softened.

Step 2Add the herbs, mustard, lemon juice, broth and wine to the livers and onions, and cook over a low heat until the liquid has evaporated.

Step 3Remove from the heat.

Step 4Transfer to a food processor and blend whilst adding the butter (fat) until a smooth consistency is reached, season to taste.

Step 5Transfer to a shallow dish or ramekins and pop in the fridge for 2-3 hours. You can top with warmed butter or coconut oil; both will form an airtight seal once chilled.
