Ingredients

  • 1 kg butternut pumpkin
  • 1 tsp olive oil
  • 300 g zucchini sliced
  • 2 tbs fresh basil chopped
  • 4 egg
  • 3 egg whites
  • 1 cup low-fat fetta crumbled
  • 1/2 cup 25% fat-free cheddar cheese grated

Method

  • Step 1
    Steam pumpkin for 10-12 minutes or until tender, drain well.
  • Step 2
    Preheat oven to 180C.
  • Step 3
    Meanwhile, heat oil in frypan and cook onion for 2 minutes.
  • Step 4
    Add zucchini and saute for 3-4 minutes, add basil.
  • Step 5
    In a large bowl, whisk together eggs and egg whites.
  • Step 6
    Add feta, stir in pumpkin and zucchini, and mix well. Season to taste.
  • Step 7
    Pour into a lightly oiled 25 x 17 cm baking dish and sprinkle with grated cheese.
  • Step 8
    Bake for 20-25 minutes or until golden and firm.
Recipe Notes
Serve with salad.
