Ingredients
- 1 kg butternut pumpkin
- 1 tsp olive oil
- 300 g zucchini sliced
- 2 tbs fresh basil chopped
- 4 egg
- 3 egg whites
- 1 cup low-fat fetta crumbled
- 1/2 cup 25% fat-free cheddar cheese grated
Method

Step 1Steam pumpkin for 10-12 minutes or until tender, drain well.

Step 2Preheat oven to 180C.

Step 3Meanwhile, heat oil in frypan and cook onion for 2 minutes.

Step 4Add zucchini and saute for 3-4 minutes, add basil.

Step 5In a large bowl, whisk together eggs and egg whites.

Step 6Add feta, stir in pumpkin and zucchini, and mix well. Season to taste.

Step 7Pour into a lightly oiled 25 x 17 cm baking dish and sprinkle with grated cheese.

Step 8Bake for 20-25 minutes or until golden and firm.
