Ingredients

  • 300g zucchini
  • 200g haloumi, grated
  • 1 tsp lemon zest
  • 2 tbs mint, chopped
  • 1 tbs parsley, chopped
  • 2 eggs
  • 1/3 cup plain flour
  • 2 tbs olive oil
  • Lemon wedges, to serve

Yoghurt dressing

  • 1/2 cup Greek yoghurt
  • 1 tbs olive oil
  • Pinch of salt and pepper *to season

Method

  • Step 1
    To make the dressing, combine yoghurt with olive oil. Season well with salt and pepper and set aside.
  • Step 2
    Grate zucchini into a colander. Squeeze and allow liquid to drain away. Place in a bowl with grated haloumi, lemon zest, herbs and eggs. Mix well to combine, then stir through flour.

  • Step 3
    Heat oil in a large frypan. Drop large spoonfuls of batter into the pan, shape into rounds and cook for 1 - 2 minutes each side until golden.
  • Step 4
    Serve with yoghurt dressing and lemon wedges.

This recipe can also make 16 small fritters.
