Put these speedy vegetarian zucchini and haloumi fritters on standby for an easy midweek family meal.
Ingredients
- 300g zucchini
- 200g haloumi, grated
- 1 tsp lemon zest
- 2 tbs mint, chopped
- 1 tbs parsley, chopped
- 2 eggs
- 1/3 cup plain flour
- 2 tbs olive oil
- Lemon wedges, to serve
Yoghurt dressing
- 1/2 cup Greek yoghurt
- 1 tbs olive oil
- Pinch of salt and pepper *to season
Method

Step 1To make the dressing, combine yoghurt with olive oil. Season well with salt and pepper and set aside.

Step 2Grate zucchini into a colander. Squeeze and allow liquid to drain away. Place in a bowl with grated haloumi, lemon zest, herbs and eggs. Mix well to combine, then stir through flour.

Step 3Heat oil in a large frypan. Drop large spoonfuls of batter into the pan, shape into rounds and cook for 1 - 2 minutes each side until golden.

Step 4Serve with yoghurt dressing and lemon wedges.
