Ingredients

  • 2 tsp olive oil
  • 200 g kransky sausage sliced
  • 1 brown onion diced
  • 6 egg
  • 80 ml milk
  • 350 g zucchini coarsely grated squeezed dry
  • 1/3 cup plain flour
  • 150 g carrot grated
  • 1 pinch salt
  • 1 pinch ground black pepper

Method

  • Step 1
    Preheat oven to 200C degrees or 180C fan-forced. Line an 18cm square cake pan with baking paper.

  • Step 2
    Heat oil in a non-stick frying pan and cook stirring the kransky and onion until soft, approximately 8-10 minutes. Drain on paper towel. Set aside to cool.
  • Step 3
    Whisk the eggs with milk together. Season with salt and black pepper. Stir in the zucchini,carrot and Kransky mixture and combine well. Add flour and stir. Transfer the mixture into prepared pan and smooth surface.
  • Step 4
    Bake for about 35 minutes or when you insert the skewer,come out clean. Set aside in the pan for 10 minutes before cutting into slices.

Recipe Notes

This slices are good hot or cold and great lunch box snack for kids and adults alike. I like to use Gotzinger Small Goods brand of kransky.
