Here’s a different type of custard slice that has a delicious orange twist. It has fresh orange juice in both the custard and the icing, and uses Lattice biscuits to make it super easy to prepare.
Ingredients
- 200g Arnott’s Lattice biscuits
- 250ml milk
- 450ml cream
- 100g Cottees vanilla instant pudding
- 2 tbsp custard powder
- 1 tbsp orange zest
- 1/3 cup fresh orange juice
Orange icing
- 1 cup icing sugar
- 2 tbsp fresh orange juice
Method

Step 1Line a square cake tin with baking paper, allowing plenty to hang over the side to make it easy to lift out the finished slice. Arrange Lattice biscuits upside down in the base of the tin.

Step 2Place milk and cream in the bowl of a stand mixer with the whisk attachment. Sprinkle over instant pudding and custard powder. Beat for a minute until well combined, then add orange zest and juice, and continue beating for 4 minutes until thick.

Step 3Spread custard mixture over Lattice biscuits in tin and smooth out evenly. Top with remaining Lattice biscuits. Refrigerate for at least an hour or overnight.

Step 4To make the icing, sift icing sugar into a bowl. Add orange juice and mix into a smooth icing.

Step 5Using overhanging baking paper, remove slice from the tin and place on a serving plate. Drizzle over icing, slice into squares and serve.
Recipe Notes
(Plus one hour refrigeration time).
Choose a cake tin that fits the lattice biscuits snugly. You may need to cut some to fill the tin.
Remove the zest from a fresh orange then juice it. You should only need 1-2 oranges for the required quantity of juice.
Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
