Ingredients

  • 8 desiree potatoes medium
  • 2 tbs sumac
  • 1 lemon
  • 3 spring onions
  • 5 g parsley
  • 1 red onion
  • 2 tbs olive oil
  • 1/2 tsp paprika
  • 1 tsp salt

Method

  • Step 1
    Place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium and cook potatoes, uncovered, for 20 minutes or until tender when pierced with a skewer. Drain. Transfer to a bowl.
  • Step 2
    Once the potatoes are cool enough to handle, cut them into rough square pieces. Place them in a large bowl.
  • Step 3
    Add all the ingredients: sumac, paprika, lemon juice, olive oil, parsley, red onion, salt and spring onions.
  • Step 4
    Gently mix all the ingredients and serve as a side dish or a salad to take to a barbecue.
Recipe Notes

Sumac is a zesty lemon flavour that is added to Mediterranean dishes. It grows on a shrub and is basically the fruit of the shrub.
