A sugar biscuit to mould and then fill.
Ingredients
- 1/2 cup golden syrup
- 100 g unsalted butter
- 1 tsp brandy
- 1/2 cup brown sugar
- 80 g plain flour
- 1 tsp ground ginger
Method

Step 1Preheat oven to 160C.

Step 2In a large saucepan, melt the butter and add the golden syrup and brandy.

Step 3Add the dry ingredients and mix.

Step 4Bake on a tray lined with greaseproof paper, until dark brown and blistered.

Step 5Cool for a few minutes and while still warm roll into a cylinder.
Recipe Notes
Wrap the warm brandy snap around the handle of a wooden spoon to form a cylinder.
