Ingredients

  • 55 g butter
  • 5 tbs honey
  • 250 ml plain yoghurt
  • 1 large egg room temperature
  • 1 lemon zested
  • 65 ml lemon juice
  • 140 g plain flour
  • 170 g wholemeal plain flour
  • 1 1/2 tsp bicarbonate of soda
  • 0.125 tsp nutmeg

Method

  • Step 1
    Preheat oven to 190c and grease a 12 muffin pan.
  • Step 2
    In saucepan, melt butter and honey. Remove from heat and set aside, cool slightly.
  • Step 3
    In a bowl, whisk together the yoghurt, egg, lemon rind and juice.
  • Step 4
    Add the butter and honey mixture, set aside.
  • Step 5
    In another bowl, sift the dry ingredients together, lightly fold into the yoghurt mixture.
  • Step 6
    Fill muffin cups ⅔ full. Bake until tops spring back, about 20-25 minutes.
  • Step 7
    Cool in the pan for 5 minutes before turning out.

  • 1 12-hole muffin pan
