These go well in the kids lunch boxes.
Ingredients
- 55 g butter
- 5 tbs honey
- 250 ml plain yoghurt
- 1 large egg room temperature
- 1 lemon zested
- 65 ml lemon juice
- 140 g plain flour
- 170 g wholemeal plain flour
- 1 1/2 tsp bicarbonate of soda
- 0.125 tsp nutmeg
Method

Step 1Preheat oven to 190c and grease a 12 muffin pan.

Step 2In saucepan, melt butter and honey. Remove from heat and set aside, cool slightly.

Step 3In a bowl, whisk together the yoghurt, egg, lemon rind and juice.

Step 4Add the butter and honey mixture, set aside.

Step 5In another bowl, sift the dry ingredients together, lightly fold into the yoghurt mixture.

Step 6Fill muffin cups ⅔ full. Bake until tops spring back, about 20-25 minutes.

Step 7Cool in the pan for 5 minutes before turning out.
