A lovely winter favourite in our family.
Ingredients
- 700 g chicken breast fillet
- 1 onion diced
- 1 red capsicum diced
- 1 tsp curry powder
- 2 tsp crunchy peanut butter
- 410 g canned crushed tomatoes
- 410 g tomato soup
- 2 garlic cloves crushed
- 1 tbs sugar
Method

Step 1Heat oil in pan and add chicken. Cook until chicken changes colour.

Step 2Add onion and garlic and cook for 2 minutes.

Step 3Stir in curry powder and peanut butter. Add crushed tomatoes and soup to combine.

Step 4Add capsicum then stir in sugar. Serve on a bed of rice.
