Ingredients

  • 100 g butter
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cup plain flour
  • 2 tbs cocoa
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1 cup roasted peanuts husks removed

Method

  • Step 1
    Cream the butter and sugar together until light and fluffy, add in the egg and beat well.
  • Step 2
    Mix in the sifted flour, cocoa, salt and baking powder, then stir in the peanuts.
  • Step 3
    Roll teaspoonfuls of mixture into balls and place on a paper lined tray. Press flat with a fork.
  • Step 4
    Bake at 180C for 20-25 minutes.
Recipe Notes
If you have raw peanuts you need to dehusk them first. Place them into a dry frying pan and lightly toast them over a medium heat, keep watching them as they can easily burn. The peanuts will often split into two halves when the skins become loose. Then let them cool for 5-10 minutes and rub them in a paper towel to completely take off the skin. Discard the skins. When adding the peanuts to the mixture they should be cold.
