An old Kiwi classic, sweet, crunchy and full of peanuts.
Ingredients
- 100 g butter
- 1 cup sugar
- 1 egg
- 1 1/2 cup plain flour
- 2 tbs cocoa
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1 cup roasted peanuts husks removed
Method

Step 1Cream the butter and sugar together until light and fluffy, add in the egg and beat well.

Step 2Mix in the sifted flour, cocoa, salt and baking powder, then stir in the peanuts.

Step 3Roll teaspoonfuls of mixture into balls and place on a paper lined tray. Press flat with a fork.

Step 4Bake at 180C for 20-25 minutes.
Recipe Notes
If you have raw peanuts you need to dehusk them first. Place them into a dry frying pan and lightly toast them over a medium heat, keep watching them as they can easily burn. The peanuts will often split into two halves when the skins become loose. Then let them cool for 5-10 minutes and rub them in a paper towel to completely take off the skin. Discard the skins. When adding the peanuts to the mixture they should be cold.
