Ingredients

  • 1 1/2 cups dates chopped pitted
  • 1/3 cup maple syrup
  • 2 tbs margarine
  • 1 cup water
  • 1 egg
  • 1/2 cup sultanas
  • 1 1/4 cups wholemeal self-raising flour
  • 1/2 cup Pauls lactose-free Zymil milk
  • 1/2 cup pecans chopped
  • 1/2 cup walnuts chopped

Method

  • Step 1
    Preheat oven to 180 degrees. Grease and line a loaf tin with baking paper.
  • Step 2
    Add the dates, sultanas, maple syrup, margarine and water into a saucepan and heat for a few minutes until the dates begin to soften.
  • Step 3
    Remove from the heat, add in the milk and egg and then add in the flour and fold through. Add the nuts stir through and then pour the batter into the baking tin.
  • Step 4
    Bake for 30-40 minutes or until a skewer inserted comes out clean. Serve warm.

Recipe Notes

You can add any nuts you like, or you can leave the nuts out if you are not a fan.

I use Zymil low fat milk.
