I love this recipe, because I love Italian food and this dish is just so yummy.
Ingredients
- 8 (cutlets) chicken thighs
- 2 tbs plain flour
- 2 tbs oil
- 8 slices salami shredded
- 1 onion sliced
- 1 cup mozzarella grated
- 1/2 cup fresh basil shredded
- 1 cup pasta sauce
Method

Step 1Toss chicken thighs lightly in flour, shake away excess flour.

Step 2Heat oil in pan, add chicken, cook on both sides until well browned. Remove from pan.

Step 3Drain on absorbent paper. Drain all but 1 tablespoon of oil from pan.

Step 4Add salami and onion, cook, stirring, until onion is soft.

Step 5Allow to cool, then stir in the cheese and basil.

Step 6Place chicken in a shallow ovenproof dish and top with pasta sauce.

Step 7Cover and bake at 200C for approximately 45 minutes, or until chicken is cooked through.

Step 8Sprinkle with cheese and salami mixture.

Step 9Return to oven and bake, uncovered, for a further 10 minutes or until cheese has melted.
Recipe Notes
Serve chicken with rice and peas, if desired.
Serve with garlic bread as well.
Suitable to freeze, but not suitable to microwave.
