These super-easy coconut and chocolate Christmas truffles make for the perfect edible gift this festive season. They boast all the flavours of classic white Christmas slice, with even less effort required.
Ingredients
- 375g pkt white chocolate melts
- 295g can sweetened condensed milk
- 1 1/2 cups rice bubbles
- 1/2 cup shredded coconut, plus extra to roll
- 1/3 cup dried cranberries
- 1/4 cup pistachios, chopped
Method

Step 1Melt the chocolate in a medium heatproof bowl over a saucepan of simmering water (don't let the bowl touch the water). Fold in the remaining ingredients. Place in the fridge for 30 minutes or until firm enough to roll.

Step 2Use a tablespoon to measure out the chocolate mixture and roll in a ball. Roll in extra coconut. Repeat with the remaining mixture to make 40 balls. Store in the fridge
