These super-easy coconut and chocolate Christmas truffles make for the perfect edible gift this festive season. They boast all the flavours of classic white Christmas slice, with even less effort required. - alicea67

Ingredients

  • 375g pkt white chocolate melts
  • 295g can sweetened condensed milk
  • 1 1/2 cups rice bubbles
  • 1/2 cup shredded coconut, plus extra to roll
  • 1/3 cup dried cranberries
  • 1/4 cup pistachios, chopped

Method

  • Step 1
    Melt the chocolate in a medium heatproof bowl over a saucepan of simmering water (don't let the bowl touch the water). Fold in the remaining ingredients. Place in the fridge for 30 minutes or until firm enough to roll.

  • Step 2
    Use a tablespoon to measure out the chocolate mixture and roll in a ball. Roll in extra coconut. Repeat with the remaining mixture to make 40 balls. Store in the fridge
