White Christmas Pudding Balls

A different spin on Christmas pudding balls. I made these for the girls at work one year for Christmas, they went down a treat. Everyone wanted the recipe to make for their families as well. Yummy little balls - you won't be able to stop at one. - BeckyB

Ingredients

  • 125 g sweet plain biscuits
  • 400 g condensed milk
  • 3 Peppermint Crisp chocolate bars roughly chopped
  • 150 g white chocolate roughly chopped
  • 1 cup coconut
  • 1 tbs cocoa
  • 1/2 cup coconut *to decorate

Decoration

  • 80 g white chocolate melts
  • 1 packet spearmint leaf lollies cut into strips *to decorate
  • 1 packet silver cachous *to decorate

Method

  • Step 1
    Blend biscuits to create crumbs, add cocoa, condensed milk, and coconut and mix until combined.
  • Step 2
    Stir through peppermint bars and chocolate. Cover and refrigerate for 30 minutes to harden a little.
  • Step 3
    Roll into balls and roll in coconut. Set aside.
  • Step 4
    Decoration: Melt chocolate. Dip the top of each ball into melted chocolate.
  • Step 5
    Top with spearmint leaves and cachous balls to resemble holly.
Recipe Notes
This recipe is endless with variations. You can do rocky road balls and add chopped up lolly raspberries, chopped nuts and milk chocolate, or cherry ripes. Makes about 30 balls. I use Scotch Finger biscuits.
