An addictive alternative of the traditional white Christmas.
Ingredients
- 250 g copha
- 1 1/2 cup milk powder
- 1 1/2 cup Rice Bubbles
- 1 1/2 cup icing sugar
- 1 1/2 cup desiccated coconut
Topping
- 35 g Peppermint Crisp chocolate bars crushed
- 15 raspberry lollies
Method

Step 1Melt copha over medium heat. Set aside to cool.

Step 2Mix dry ingredients.

Step 3Add melted copha to dry ingredients. Stir well until combined.

Step 4Divide mix evenly between patty pans. Alternatively, press mixture into a tray.

Step 5Sprinkle crushed chocolate bar over the patty pans.

Step 6Using scissors, cut the raspberry lollies to a desired size and place on top.

Step 7Refrigerate until firm.
Recipe Notes
If you choose to make a slice, refrigerate for 10 minutes then remove to cut into slices then refrigerate until firm. You can add slivered almonds for another twist.
