Dairy-free and sugar-free, this moist banana bread loaf is naturally sweetened with coconut milk and honey.
Ingredients
- 2 cups of plain organic flour
- 4 Weet-Bix crushed
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 4 bananas
- 2 eggs lightly beaten
- 1/4 cup coconut oil
- 1 tbs honey
- 1 cup coconut milk
- 2 tbs shredded coconut
Method

Step 1Preheat the oven to 180C. Lightly grease and line a 24cm x 14cm loaf dish.

Step 2Combine the flour, Weet-Bix, baking soda, baking powder and cinnamon in a large bowl. Combine all 3 mashed bananas, eggs, coconut oil, honey and coconut milk in a separate bowl and whisk.

Step 3Add the wet mixture to the dry mixture and mix until combined. Then pour into the prepared baking dish. Slice the remaining banana lengthways and add two halves on top with shredded coconut sprinkled on top.

Step 4Cook on the bottom shelf of the oven for 40 minutes or until a skewer comes out clean.

Step 5Let it rest for 10 minutes then serve with ricotta and honey.
