Ingredients

  • 1 tbs oil
  • 2 banana chopped
  • 1 apple grated small
  • 3/4 cup olive oil
  • 3 tbs water
  • 1/4 tsp ground cinnamon
  • 2/3 cup raw sugar
  • 1 egg
  • 1/2 cup vanilla yoghurt
  • 1 3/4 cup self-raising flour

Method

  • Step 1
    Preheat oven to 175C (fan-forced).
  • Step 2
    Oil a 12 cup muffin pan.
  • Step 3
    Place flour, sugar and cinnamon in a large bowl.
  • Step 4
    Make a well in the centre, add egg and yoghurt, slowly stir through.
  • Step 5
    Add chopped banana, apple, olive oil and water. Stir until just mixed.
  • Step 6
    Bake for 20-25 minutes.

Equipment

  • 1 12-hole muffin pan
Recipe Notes

You may only need 2 tablespoons of water, it depends on the consistency, it shouldn't be too runny. You can add your choice of nuts too. Ice with cream cheese icing.
