These will be a sure-fire hit at any party.
Ingredients
- 1 cup soft butter
- 1 1/2 cup caster sugar
- 2 egg
- 2 tsp vanilla extract
- 3 3/4 cup plain flour
- 2 tsp baking powder
- 1/4 cup cream
- 1 red liquid food colouring
- 1 green liquid food colouring
- 1 cup choc bits
Method

Step 1In a medium bowl, cream together the butter and sugar.

Step 2Stir in the eggs and vanilla.

Step 3Sift together the flour and baking powder, stir into the creamed mixture alternately with the heavy cream.

Step 4Take out ⅓ of the mixture to colour green. Colour the remaining mixture red.

Step 5Cover dough with cling wrap and chill for 2 to 3 hours, or overnight, until firm.

Step 6Preheat oven to 175C. Grease cookie sheets.

Step 7On a lightly floured surface, roll out the dough to ½ cm thickness.

Step 8Cut out red rounds and cut in half to make a semi-circle. Place a roll of green 'rind' around the outside and dot with chocolate bits to make the 'pips'.

Step 9Place cookies 2½ cm apart on the prepared cookie sheets. Put in the fridge for approximately 15 minutes.

Step 10Bake for 12 to 14 minutes until bottoms and edges of cookies are light brown.

Step 11Remove from baking sheet and cool on wire racks. Store in an airtight container.
Recipe Notes
Dough fades a bit when you bake it so don’t be afraid to make the colouring quite vibrant. The picture is using pink food colouring but next time I would use red as it does fade in the oven.
