Ingredients

  • 1 cup soft butter
  • 1 1/2 cup caster sugar
  • 2 egg
  • 2 tsp vanilla extract
  • 3 3/4 cup plain flour
  • 2 tsp baking powder
  • 1/4 cup cream
  • 1 red liquid food colouring
  • 1 green liquid food colouring
  • 1 cup choc bits

Method

  • Step 1
    In a medium bowl, cream together the butter and sugar.
  • Step 2
    Stir in the eggs and vanilla.
  • Step 3
    Sift together the flour and baking powder, stir into the creamed mixture alternately with the heavy cream.
  • Step 4
    Take out ⅓ of the mixture to colour green. Colour the remaining mixture red.
  • Step 5
    Cover dough with cling wrap and chill for 2 to 3 hours, or overnight, until firm.
  • Step 6
    Preheat oven to 175C. Grease cookie sheets.
  • Step 7
    On a lightly floured surface, roll out the dough to ½ cm thickness.
  • Step 8
    Cut out red rounds and cut in half to make a semi-circle. Place a roll of green 'rind' around the outside and dot with chocolate bits to make the 'pips'.
  • Step 9
    Place cookies 2½ cm apart on the prepared cookie sheets. Put in the fridge for approximately 15 minutes.
  • Step 10
    Bake for 12 to 14 minutes until bottoms and edges of cookies are light brown.
  • Step 11
    Remove from baking sheet and cool on wire racks. Store in an airtight container.
Recipe Notes
Dough fades a bit when you bake it so don’t be afraid to make the colouring quite vibrant. The picture is using pink food colouring but next time I would use red as it does fade in the oven.
