A healthy, filling and slightly saucy omelette, perfect for breakfast, lunch or dinner.
Ingredients
- 6 eggs
- 1/2 tsp chicken stock powder
- 4 cups cabbage shredded
- 1 carrot grated large
- 1/2 onion diced
- 1 cup mushrooms sliced
- 1/2 red capsicum chopped
- 5 short-cut bacon rashers chopped
- 1/4 cup tasty cheese grated
- 3 tsp soy sauce
- 1 1/2 tbs oyster sauce
Method

Step 1Whisk eggs and stock powder together and set aside.

Step 2Heat a small amount of butter in a frypan.

Step 3Sauté the onion and bacon for a few minutes.

Step 4Add the cabbage, carrot, mushrooms and capsicum. Fry for a further 2-3 minutes, stirring and turning regularly.

Step 5Add the soy and the oyster sauce and stir through the mixture. Remove from heat after 2 minutes and set aside.

Step 6In a large frypan on medium heat, add a small amount of butter.

Step 7Add half the egg mixture and swirl to allow mixture to spread up the frypan sides a little.

Step 8When the mixture is half set, sprinkle half of the cheese over the entire egg mixture. Place half the bacon and vegetable mixture over half of the omelette.

Step 9Fold and cook for a further minute.

Step 10Gently slide the omelette onto a warm plate.

Step 11Repeat with remaining mixture.
Recipe Notes
If you prefer extra cheese, add some grated cheese to the finished omelette and place under a grill until the cheese melts.
