Ingredients

  • 6 eggs
  • 1/2 tsp chicken stock powder
  • 4 cups cabbage shredded
  • 1 carrot grated large
  • 1/2 onion diced
  • 1 cup mushrooms sliced
  • 1/2 red capsicum chopped
  • 5 short-cut bacon rashers chopped
  • 1/4 cup tasty cheese grated
  • 3 tsp soy sauce
  • 1 1/2 tbs oyster sauce

Method

  • Step 1
    Whisk eggs and stock powder together and set aside.
  • Step 2
    Heat a small amount of butter in a frypan.
  • Step 3
    Sauté the onion and bacon for a few minutes.
  • Step 4
    Add the cabbage, carrot, mushrooms and capsicum. Fry for a further 2-3 minutes, stirring and turning regularly.
  • Step 5
    Add the soy and the oyster sauce and stir through the mixture. Remove from heat after 2 minutes and set aside.
  • Step 6
    In a large frypan on medium heat, add a small amount of butter.
  • Step 7
    Add half the egg mixture and swirl to allow mixture to spread up the frypan sides a little.
  • Step 8
    When the mixture is half set, sprinkle half of the cheese over the entire egg mixture. Place half the bacon and vegetable mixture over half of the omelette.
  • Step 9
    Fold and cook for a further minute.
  • Step 10
    Gently slide the omelette onto a warm plate.
  • Step 11
    Repeat with remaining mixture.
Recipe Notes
If you prefer extra cheese, add some grated cheese to the finished omelette and place under a grill until the cheese melts.
