Ingredients

  • Butter, soft, to grease
  • 1 1/4 cups milk
  • 4 eggs, separated
  • 5 tbsp caster sugar, plus extra for ramekins
  • 1/3 cup plain flour
  • 1 tsp vanilla essence
  • 1/4 tsp salt

Method

  • Step 1
    Preheat oven to 190C conventional. Place an oven tray in the oven to warm. Grease six 160ml ramekins with softened butter. Sprinkle extra sugar in each to coat the butter.
  • Step 2
    Warm milk until tepid. In a medium saucepan, whisk egg yolks, 2 tbsp sugar and flour until smooth. Add about 1/3 of the milk and whisk to incorporate. Add remaining milk and vanilla essence, and whisk well. Place saucepan over gentle heat and warm, stirring constantly, until it thickens. Transfer to a mixing bowl and allow to cool a little.
  • Step 3
    Place egg whites in the bowl of a stand mixer with salt. Whisk until thick and frothy. Gradually add remaining 3 tbsp sugar and whisk until stiff and glossy.
  • Step 4
    Working with about a third at a time, fold the egg whites into the yolk mixture very gently until just incorporated.
  • Step 5
    Spoon mixture equally between prepared ramekins. Bake for 20 minutes or until puffed up and golden. Serve immediately dusted with icing sugar.
