Don’t be scared off by the thought of making souffle at home. Gather your simple pantry ingredients and give it a go - the results are delicious.
Ingredients
- Butter, soft, to grease
- 1 1/4 cups milk
- 4 eggs, separated
- 5 tbsp caster sugar, plus extra for ramekins
- 1/3 cup plain flour
- 1 tsp vanilla essence
- 1/4 tsp salt
Method

Step 1Preheat oven to 190C conventional. Place an oven tray in the oven to warm. Grease six 160ml ramekins with softened butter. Sprinkle extra sugar in each to coat the butter.

Step 2Warm milk until tepid. In a medium saucepan, whisk egg yolks, 2 tbsp sugar and flour until smooth. Add about 1/3 of the milk and whisk to incorporate. Add remaining milk and vanilla essence, and whisk well. Place saucepan over gentle heat and warm, stirring constantly, until it thickens. Transfer to a mixing bowl and allow to cool a little.

Step 3Place egg whites in the bowl of a stand mixer with salt. Whisk until thick and frothy. Gradually add remaining 3 tbsp sugar and whisk until stiff and glossy.

Step 4Working with about a third at a time, fold the egg whites into the yolk mixture very gently until just incorporated.

Step 5Spoon mixture equally between prepared ramekins. Bake for 20 minutes or until puffed up and golden. Serve immediately dusted with icing sugar.
