Ingredients

  • 4 salmon steaks
  • 150 g baby spinach
  • 350 ml cream
  • 2 garlic cloves crushed
  • 1/2 cup parmesan grated
  • 1 pinch salt and pepper *to taste
  • 4 potatoes chopped large peeled
  • 4 tbs milk
  • 2 tbs butter

Method

  • Step 1
    Wash spinach leaves then cover the bottom of a deep oven dish with them.
  • Step 2
    Place salmon steaks on top of the spinach leaves. Season with salt and pepper.
  • Step 3
    Mix the garlic and cream together, pour over the salmon. Top with Parmesan cheese.
  • Step 4
    Bake in a moderate oven for about ½ an hour.
  • Step 5
    Boil or steam potatoes until soft. Drain, add milk and butter and mash well.
  • Step 6
    Serve the salmon on top of mashed potato.

What temperature should I bake the salmon?

This recipe calls for the salmon to be baked in a moderate oven, so preheat your oven to 180C.

Should I cover the salmon with foil while baking?

While there are recipes for salmon baked covered with foil or enclosed like a parcel, there is no need to do so for this recipe.

How will I know when the salmon is cooked?

Once salmon is cooked, the flesh should flake away easily when pressed gently with a fork.
