A vegetarian quiche you can serve hot or cold.
Ingredients
- 3 eggs
- 100 g fetta crumbled
- 125 g spinach
- 1/2 cup self-raising flour
- 1 1/2 cups skim milk
- 1/2 cup cheese grated
- 1 onion thinly sliced
- 200 g mushrooms
Method

Step 1Saute onion and mushrooms until just cooked.

Step 2Mix flour, eggs, cheese and milk together in a bowl.

Step 3Add the fetta to the spinach and combine with the onion and egg mixtures.

Step 4Spray a quiche dish with non-stick spray.

Step 5Pour mixture into dish and bake at 180C for 30-35 minutes.
Recipe Notes
I usually buy the frozen spinach and cut the packet in half and put other half in the freezer. You need to squeeze the liquid out once the spinach has defrosted.
