Ingredients

  • 3 eggs
  • 100 g fetta crumbled
  • 125 g spinach
  • 1/2 cup self-raising flour
  • 1 1/2 cups skim milk
  • 1/2 cup cheese grated
  • 1 onion thinly sliced
  • 200 g mushrooms

Method

  • Step 1
    Saute onion and mushrooms until just cooked.
    Spinach and fetta quiche
  • Step 2
    Mix flour, eggs, cheese and milk together in a bowl.
  • Step 3
    Add the fetta to the spinach and combine with the onion and egg mixtures.
  • Step 4
    Spray a quiche dish with non-stick spray.
  • Step 5
    Pour mixture into dish and bake at 180C for 30-35 minutes.
Recipe Notes

I usually buy the frozen spinach and cut the packet in half and put other half in the freezer. You need to squeeze the liquid out once the spinach has defrosted.
