Ingredients

  • 50g butter
  • 1/3 cup brown sugar
  • 6 bananas cut into pieces large ripe
  • 125g butter softened
  • 1 1/4 cups brown sugar *extra
  • 2 eggs lightly beaten
  • 1 1/2 cups self-raising flour
  • 1 tsp baking powder
  • 2 bananas large mashed *extra

Method

  • Step 1
    Preheat the oven to 180C. Grease and line a 21cm circle cake tin. Pour the melted butter over the base of the tin and sprinkle with the sugar. Arrange the bananas over the sugar.

  • Step 2
    Cream the butter and extra brown sugar until light and fluffy. Then add eggs gradually, beating well.
  • Step 3
    Sift the flour and baking powder into a bowl, then fold into the cake mixture with the mashed banana. Carefully spread into the tin, and bake for 45 minutes, or until a skewer comes out clean. Turn out whilst warm, but not boiling.
Recipe Notes

Bananas must be very ripe or the cake will not be tender and squishy.
