Ingredients

  • 10 g butter
  • 1 onion chopped
  • 1 bacon rashers chopped
  • 500 g mixed vegetables chopped
  • 425 g canned chopped tomato
  • 300 g red canned kidney beans drained washed
  • 3 cups beef stock (liquid)
  • 1/2 cup macaroni
  • 1 tbs parmesan cheese *to serve

Method

  • Step 1
    Melt butter in large pan and cook onion and bacon for 3 minutes.
  • Step 2
    Add chopped vegetables and cook until softened.
  • Step 3
    Add tomatoes, beans, stock and pasta.
  • Step 4
    Cover and simmer for 25 minutes or until pasta is tender.
  • Step 5
    Serve sprinkled with parmesan cheese.
Recipe Notes

This goes very well with garlic, herb or parmesan bread.
