Nice on that cold night.
Ingredients
- 10 g butter
- 1 onion chopped
- 1 bacon rashers chopped
- 500 g mixed vegetables chopped
- 425 g canned chopped tomato
- 300 g red canned kidney beans drained washed
- 3 cups beef stock (liquid)
- 1/2 cup macaroni
- 1 tbs parmesan cheese *to serve
Method

Step 1Melt butter in large pan and cook onion and bacon for 3 minutes.

Step 2Add chopped vegetables and cook until softened.

Step 3Add tomatoes, beans, stock and pasta.

Step 4Cover and simmer for 25 minutes or until pasta is tender.

Step 5Serve sprinkled with parmesan cheese.
Recipe Notes
This goes very well with garlic, herb or parmesan bread.
