A great way to hide vegetables. These also make great snacks for lunch boxes and they also freeze well.
Ingredients
- 170 g Maggi chicken-flavoured 2-minute noodles
- 3 cups mixed vegetables grated
- 2 eggs lightly beaten
- 1/2 cup light sour cream
- 1/2 cup ham (deli) chopped
- 1/2 cup light tasty cheese
Method

Step 1Preheat oven to 180C.

Step 2Lightly spray a muffin pan with olive oil.

Step 3Cook noodles as directed - reserving flavour sachets - and then drain.

Step 4Add reserved flavour sachets and remaining ingredients, and mix well.

Step 5Spoon equal portions into muffin pan.

Step 6Bake for 30-35 minutes or until set.

- 1 muffin pan
Recipe Notes
Cheese may be sprinkled on top of muffins instead of including in ingredients.
Ham can be substituted with bacon.
Give these noodle cups a chow mein twist by replacing the chicken noodle flavour sachet with a sachet of MAGGI Mince Chow Mein Recipe mix.
