Ingredients

  • 3 broccoli
  • 8 tbs lukewarm water
  • 60 g plain flour
  • 30 g parmesan cheese finely grated
  • 1 tsp salt flakes
  • 1 egg
  • 1/4 cup oil

Method

  • Step 1
    Boil the vegetables in salted water for 3 minutes. Drain, cool and cut into pieces of your choice.
  • Step 2
    Place warm water in a bowl. Sift flour through a strainer above the bowl, whisking constantly with a balloon whisk. Whisk until smooth.
  • Step 3
    Add parmesan and salt.
  • Step 4
    Break in the egg and whisk thoroughly into a batter.
  • Step 5
    Heat the oil to 1 cm depth in a non-stick frypan.
  • Step 6
    Dip a few pieces of the vegetable in the batter.
  • Step 7
    Test the oil is sizzling by dropping in a little bit of the batter.
  • Step 8
    Drop in the vegetables a few at the time. Cook over medium heat for 2 minutes each side until golden brown. Drain on paper towel.
Recipe Notes
Serve at once. Cauliflower or broccolini can be substituted.
