A nice light and crunchy vegetable dish.
Ingredients
- 3 broccoli
- 8 tbs lukewarm water
- 60 g plain flour
- 30 g parmesan cheese finely grated
- 1 tsp salt flakes
- 1 egg
- 1/4 cup oil
Method

Step 1Boil the vegetables in salted water for 3 minutes. Drain, cool and cut into pieces of your choice.

Step 2Place warm water in a bowl. Sift flour through a strainer above the bowl, whisking constantly with a balloon whisk. Whisk until smooth.

Step 3Add parmesan and salt.

Step 4Break in the egg and whisk thoroughly into a batter.

Step 5Heat the oil to 1 cm depth in a non-stick frypan.

Step 6Dip a few pieces of the vegetable in the batter.

Step 7Test the oil is sizzling by dropping in a little bit of the batter.

Step 8Drop in the vegetables a few at the time. Cook over medium heat for 2 minutes each side until golden brown. Drain on paper towel.
Recipe Notes
Serve at once. Cauliflower or broccolini can be substituted.
