Ingredients

  • 375g potato, cooked
  • 300g mixed vegetables, cooked
  • 6 tbs sweet chilli sauce
  • Pinch of salt and pepper
  • 25 g plain flour
  • 1 large egg, beaten
  • 150g white fresh breadcrumbs
  • Oil *to fry

Method

  • Step 1
    Roughly mash potatoes and vegetables and mix with sauce, adding salt and pepper to taste.
  • Step 2
    Divide into 16 equal portions and form each into sausage shaped croquettes.
  • Step 3
    Roll each croquette in flour, egg and then breadcrumbs to coat.
  • Step 4
    Heat oil in a large frying pan and gently shallow fry in batches until the croquettes are golden all over.
  • Step 5
    Drain on kitchen paper before serving with a salad.
Recipe Notes

Roll a small sausage shape ball of castello, blue cheese or frozen garlic butter in the middle of the potato, or mix in your favourite herbs and spices. Can be prepared and frozen for later use. You can use sweet chilli, tomato or cheese sauce.
