Ingredients

  • 2 eggs large
  • 1 cup caster sugar
  • 4 tbs vegetable oil
  • 15g baking powder
  • 2 cups continental flour
  • 200ml vanilla yoghurt
  • 1/2 cup milk
  • 8g vanilla sugar
  • 425g canned cherrries drained pitted
  • 855g canned apricots drained halved

Method

  • Step 1
    Preheat oven to 160C. Grease a baking tray with unsalted butter and dust with continental flour.
  • Step 2
    Add eggs and caster sugar to a bowl and combine with electric mixer until nice and fluffy. Add the remaining ingredients (apart from the fruit) and gently mix by hand until combined.
  • Step 3
    Pour the mixture onto the baking tray and top with fruit. Place in a preheated oven for about 45 minutes or when a skewer comes out clean.
  • Step 4
    Leave to cool, then dust with little bit of icing sugar mixed with extra vanilla sugar. Serve with your favourite coffee or tea.

Recipe Notes

I used a 35cm long, 24cm wide and 6cm high baking tray and it was perfect.

I never use baking paper. I find if you grease and dust with flour or breadcrumbs it works best.
