This is a very old recipe and always delicious with cup of coffee or tea.
Ingredients
- 2 eggs large
- 1 cup caster sugar
- 4 tbs vegetable oil
- 15g baking powder
- 2 cups continental flour
- 200ml vanilla yoghurt
- 1/2 cup milk
- 8g vanilla sugar
- 425g canned cherrries drained pitted
- 855g canned apricots drained halved
Method

Step 1Preheat oven to 160C. Grease a baking tray with unsalted butter and dust with continental flour.

Step 2Add eggs and caster sugar to a bowl and combine with electric mixer until nice and fluffy. Add the remaining ingredients (apart from the fruit) and gently mix by hand until combined.

Step 3Pour the mixture onto the baking tray and top with fruit. Place in a preheated oven for about 45 minutes or when a skewer comes out clean.

Step 4Leave to cool, then dust with little bit of icing sugar mixed with extra vanilla sugar. Serve with your favourite coffee or tea.

Recipe Notes
I used a 35cm long, 24cm wide and 6cm high baking tray and it was perfect.
I never use baking paper. I find if you grease and dust with flour or breadcrumbs it works best.
