Ginger nut cookies sandwiched with whipped cream. Great for a quick dessert.
Ingredients
- 300 ml thickened cream
- 2 tbs icing sugar
- 1 tsp vanilla extract
- 500 g gingernut biscuits
Method

Step 1Combine cream and vanilla extract.

Step 2Whip to form stiff peaks, slowly adding sugar.

Step 3Lay 1 packet of biscuits out on a tray.

Step 4Top with teaspoonfuls of cream. Sandwich each with remaining packet of biscuits.

Step 5Place in the fridge overnight.
Recipe Notes
Best made the day before. Refrigerating overnight will make the ginger nuts soft and similar to bought ginger kisses.
