Get the kids involved in making these super simple but delicious unicorn cupcakes. They're perfect for morning tea or at your next party.
Ingredients
- 150g butter
- 2/3 cup sugar
- 1 tsp vanilla extract
- 4 eggs, beaten
- 2 cups self-raising flour
- 4 tbs milk
Icing
- 1 sheet of fondant
- 250g salted butter, softened
- 500g icing sugar
- Splash of milk
- Gel food colouring
Method

Step 1Cream the butter and sugar until light and fluffy. Add the vanilla, then eggs, beating well.

Step 2Gradually add the flour, beating constantly. Slowly add the milk and beat a further two or three minutes until the entire mixture is pale.

Step 3Place patty pan cases into a muffin try and spoon mixture into cases.

Step 4Bake at 150C for 15 minutes, or until golden brown. Allow to cool before piping on the icing.

Step 5Meanwhile, make the decorations and icing. Using the fondant sheet, shape unicorn horns and earts.

Step 6Place 250g softened butter into a large bowl and using electric beaters, beate on a slow speed. Gradually add the icing sugar until combined. Add a splash of milk for a smoother consistency of necessary.

Step 7Divide the icing mixture into three bowls, add a few drops of gel food colours and mix to combine.

Step 8Place a large piece of cling wrap onto your bench. Spoon one strip of the coloured icing onto the cling wrap. Repeat with the other two colours. Roll over the clingwrap to make a sausage shape. Twist one end and cut the other. Place into a piping bag and decorate the cupcakes.

Recipe Notes
You can purcahse premade unicorn accessories from a cake supply store or you can substitute the fondant with pieces of marshmallows. You can even us a birthday candle as the unicorn horn.
