A bruschetta type salad that is so cool for summer.
Ingredients
- 1 continental cucumber large roughly chopped
- 3 tomato diced
- 1 red onion diced small
- 1 tsp lemon juice
Method

Step 1Place all ingredients into a bowl and toss through lemon juice.

Step 2Refrigerate to chill.

Step 3Serve with sliced crusty bread.
Recipe Notes
I first came across this salad in Bodrum, Turkey (opposite the Greek Islands) a while back. It would be served for breakfast with fresh crusty bread and eggs on the side. I have since made it to accompany BBQ dishes and it is always a hit on a hot day as it seems to be quite cooling and refreshing. It can also be served as an appetiser. I prefer to use vine ripened tomato.
