Ingredients

  • 1 continental cucumber large roughly chopped
  • 3 tomato diced
  • 1 red onion diced small
  • 1 tsp lemon juice

Method

  • Step 1
    Place all ingredients into a bowl and toss through lemon juice.
  • Step 2
    Refrigerate to chill.
  • Step 3
    Serve with sliced crusty bread.
Recipe Notes
I first came across this salad in Bodrum, Turkey (opposite the Greek Islands) a while back. It would be served for breakfast with fresh crusty bread and eggs on the side. I have since made it to accompany BBQ dishes and it is always a hit on a hot day as it seems to be quite cooling and refreshing. It can also be served as an appetiser. I prefer to use vine ripened tomato.
