Ingredients

  • 1 large chopped onion
  • 1 large diced carrot
  • 1 large diced potato
  • 1 mug-sized cup of red lentils
  • 1 heaped tbsp red pepper paste
  • 1 Massel Chicken Style Stock Cube
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp dry mint
  • 1 tsp paprika
  • 1 tbsp butter

Method

  • Step 1
    Saute the onions in olive oil for a few minutes and add potatoes and carrots. Cook for a further few minutes. Add capsicum paste along with the stock cube. Mix.
  • Step 2
    Add lentils along with approximately 5 cups water (using the same cup). Bring to the boil then reduce the heat and simmer for approximately 45 minutes or until the ingredients are soft. You may need to top up with water during the cooking process.
  • Step 3
    Using a stick blender, blend the ingredients.
  • Step 4
    In a separate pan melt butter with mint and paprika until sizzling. Add it to the soup. Drizzle with a squeeze of lemon. Serve with toasted Turkish bread.
