An easy, nutritious family meal which reheats well the next day.
Ingredients
- 1 cup rice
- 1 egg
- 30 g butter
- 1 pinch salt and pepper
- 440 g canned tuna
- 1 lemon
- 1 1/2 cups corn cob kernels
- 1 zucchini grated medium
Topping
- 4 eggs
- 1 tsp curry powder
- 1 cup milk
- 1 cup cream
- 3 tbs mixed herbs chopped
Method

Step 1Cook rice until soft.

Step 2While still warm, stir in egg, butter, salt and pepper.

Step 3Press into the base of a casserole dish.

Step 4Cover rice with flaked tuna, then squeeze lemon over the top.

Step 5Evenly scatter corn kernels and zucchini over the tuna.

Step 6Topping: Beat together eggs, milk, cream and curry powder.

Step 7Add herbs and pour over other ingredients.

Step 8Bake in a moderate oven until set.

Step 9Serve with a green salad.

- 1 casserole dish
Recipe Notes
Cover the top with aluminium foil if it browns too much during cooking.
