Ingredients

  • 1 cup rice
  • 1 egg
  • 30 g butter
  • 1 pinch salt and pepper
  • 440 g canned tuna
  • 1 lemon
  • 1 1/2 cups corn cob kernels
  • 1 zucchini grated medium

Topping

  • 4 eggs
  • 1 tsp curry powder
  • 1 cup milk
  • 1 cup cream
  • 3 tbs mixed herbs chopped

Method

  • Step 1
    Cook rice until soft.

    While still warm, stir in egg, butter, salt and pepper.
  • Step 3
    Press into the base of a casserole dish.
  • Step 4
    Cover rice with flaked tuna, then squeeze lemon over the top.
  • Step 5
    Evenly scatter corn kernels and zucchini over the tuna.
  • Step 6
    Topping: Beat together eggs, milk, cream and curry powder.
  • Step 7
    Add herbs and pour over other ingredients.
  • Step 8
    Bake in a moderate oven until set.
  • Step 9
    Serve with a green salad.

Equipment

  • 1 casserole dish
Recipe Notes

Cover the top with aluminium foil if it browns too much during cooking.
