Ingredients

  • 6 potato cut into pieces peeled
  • 400 g canned tuna in brine
  • 1 egg
  • 1 cup dried breadcrumbs
  • 2 tbs butter

Method

  • Step 1
    Boil potatoes until soft. Mash but don't add milk or butter. Allow to cool at room temperature until cold.
  • Step 2
    Drain tuna of all liquid.
  • Step 3
    Stir tuna into cooled potatoes and add the egg. Mix until well combined.
  • Step 4
    Roll into balls and coat with breadcrumbs, flatten slightly and layer on a plate, ensuring there are extra breadcrumbs between patties.
  • Step 5
    Refrigerate for 1-2 hours or overnight.
  • Step 6
    Cook on both sides in fry-pan.
