Ingredients

  • 425 g canned tuna
  • 395 ml evaporated milk
  • 1/4 cup red capsicum chopped
  • 1/4 cup cabbage finely chopped
  • 1 carrot grated small
  • 1 cup fresh breadcrumbs
  • 1 onion finely chopped small
  • 1/2 tbs brown vinegar
  • 1/2 tbs lemon juice
  • 1 egg
  • 1/2 tsp salt
  • 1/2 tsp pepper *to taste

Method

  • Step 1
    Thoroughly drain the tuna. Soak the capsicum in hot water for 5 minutes then dry well before chopping.
  • Step 2
    Place all ingredients in a bowl and mix well together on low speed.
  • Step 3
    Pour mixture into a greased ovenproof dish or loaf tin. Bake for 1 hour on middle shelf at 150C.

Recipe Notes
Use red or green capsicum, soft breadcrumbs and lemon or lime juice. We used a mixture of vinegar and lime juice. The recipe says you can just use juice or vinegar, but I like the citrus taste with the tuna. Nice with a bit of salad and a good meal to take for lunch.
