Ingredients

  • 1/2 cup mashed potato cold
  • 1/2 cup plain flour
  • 1/2 tsp baking powder
  • 1 tbs butter *to serve
  • 1 pinch salt *to serve

Method

  • Step 1
    Combine mashed potato, flour and baking powder.
  • Step 2
    Form into a log and cut into slices to form pancakes.
  • Step 3
    Melt a little butter in a heavy based frying pan or griddle and cook the pancakes until golden brown and heated through.
  • Step 4
    Serve hot spread with butter and sprinkled with salt.
Recipe Notes
For additional mashed potato, combined equal parts of potato, flour and baking powder. You can freeze leftover mashed potato and use it when the craving hits.
