Yummy fluffy pancakes made from leftover, cold mashed potato.
Ingredients
- 1/2 cup mashed potato cold
- 1/2 cup plain flour
- 1/2 tsp baking powder
- 1 tbs butter *to serve
- 1 pinch salt *to serve
Method

Step 1Combine mashed potato, flour and baking powder.

Step 2Form into a log and cut into slices to form pancakes.

Step 3Melt a little butter in a heavy based frying pan or griddle and cook the pancakes until golden brown and heated through.

Step 4Serve hot spread with butter and sprinkled with salt.
Recipe Notes
For additional mashed potato, combined equal parts of potato, flour and baking powder. You can freeze leftover mashed potato and use it when the craving hits.
