A lovely creamy bake, with a lemon tang.

Ingredients

  • 120 g butter chopped
  • 3/4 cup plain flour
  • 2 cups vegetable stock
  • 1 cup milk
  • 3 cup broccoli blanched chopped
  • 2 cup white rice cooked
  • 425 g canned tuna in springwater drained
  • 2 tbs lemon juice
  • 1 cup tasty cheese grated
  • 100 g potato chips crushed thin

Method

  • Step 1
    Preheat oven to 180C and lightly grease a casserole dish.
  • Step 2
    Melt butter and add flour. Cook for 1 minute, stirring constantly.
  • Step 3
    Remove from heat and whisk in stock and milk.
  • Step 4
    Return to medium heat and stir until thick and smooth.
  • Step 5
    Add broccoli, rice and tuna and season with salt, pepper and lemon juice.
  • Step 6
    Spoon into prepared dish.
  • Step 7
    Combine cheese and chips and spread over the top and bake for 20 minutes.

Equipment

  • 1 casserole dish
Recipe Notes

Serve with mixed salad and a lemon wedge. This can also be made with a can of salmon. Cream can also be used.
