A lovely creamy bake, with a lemon tang.
Ingredients
- 120 g butter chopped
- 3/4 cup plain flour
- 2 cups vegetable stock
- 1 cup milk
- 3 cup broccoli blanched chopped
- 2 cup white rice cooked
- 425 g canned tuna in springwater drained
- 2 tbs lemon juice
- 1 cup tasty cheese grated
- 100 g potato chips crushed thin
Method

Step 1Preheat oven to 180C and lightly grease a casserole dish.

Step 2Melt butter and add flour. Cook for 1 minute, stirring constantly.

Step 3Remove from heat and whisk in stock and milk.

Step 4Return to medium heat and stir until thick and smooth.

Step 5Add broccoli, rice and tuna and season with salt, pepper and lemon juice.

Step 6Spoon into prepared dish.

Step 7Combine cheese and chips and spread over the top and bake for 20 minutes.

- 1 casserole dish
Recipe Notes
Serve with mixed salad and a lemon wedge. This can also be made with a can of salmon. Cream can also be used.
