A school lunch favourite and so easy to make.
Ingredients
- 2 granny smith apple chopped large peeled
- 1 cup caster sugar
- 1 cup sultanas
- 1 cup self-raising flour
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- 2 egg
- 60 g butter melted
Method

Step 1Preheat oven to 180C.

Step 2Mix all ingredients together. Mixture will be stiff.

Step 3Bake in greased ring tin for 35-40 minutes.

Step 4Alternatively, place mixture in muffin trays and bake for 14-18 minutes.

Step 5When cooked, cover with a cloth until cake has cooled.

Step 6Drizzle with lemon icing.
Recipe Notes
I have made this as both a cake and muffins. I now only make the muffins and individually wrap them in cling wrap and freeze for school lunches. You can use any apple for this cake and I have used brown sugar which gives it a more caramel taste. This makes 12-18 muffins.
