Ingredients

  • 2 granny smith apple chopped large peeled
  • 1 cup caster sugar
  • 1 cup sultanas
  • 1 cup self-raising flour
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 2 egg
  • 60 g butter melted

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Mix all ingredients together. Mixture will be stiff.
  • Step 3
    Bake in greased ring tin for 35-40 minutes.
  • Step 4
    Alternatively, place mixture in muffin trays and bake for 14-18 minutes.
  • Step 5
    When cooked, cover with a cloth until cake has cooled.
  • Step 6
    Drizzle with lemon icing.
Recipe Notes
I have made this as both a cake and muffins. I now only make the muffins and individually wrap them in cling wrap and freeze for school lunches. You can use any apple for this cake and I have used brown sugar which gives it a more caramel taste. This makes 12-18 muffins.
