A friend of mine made this recipe for me and it's a delicious alternative to the standard cob loaf recipe - just divine!
Ingredients
- 1 cob loaf
- 425 g canned tuna in brine
- 1 onion diced large
- 250 g bacon rashers diced
- 250 g cream cheese
- 300 ml Bulla Cooking Cream
- 2 tbs garlic crushed
- 225 g cheese
Method

Step 1Preheat oven/grill to 250C.

Step 2Cut top off of cob loaf, remove bread from centre, break into bite sized pieces.

Step 3Brown bacon in a fry-pan, add onion and cook until softened.

Step 4Add crushed garlic and cook for 1 minute.

Step 5Add tuna, complete with brine, cook for 1 minute.

Step 6Combine cream cheese, stir until mixed through. Add cooking cream, cook for 1 minute.

Step 7Stir in cheese and cook until melted through.

Step 8Bake bread pieces until until crisp.

Step 9Pour tuna mixture into hollowed cob loaf, serve with baked bread pieces scattered around loaf.
Recipe Notes
I use 3-blend cheese whicj usually has Gouda/Parmesan/Mozzarella, but you can use any cheese if preferred.
