My sister gave me this recipe - apparently the school tuckshop succumbed to pressure and finally agreed to share the recipe for this very popular and easy banana cake. My family loves it.
Ingredients
- 3 bananas large ripe
- 1 cup self-raising flour sifted
- 1 egg brought to room temperature
- 1/2 cup sugar
- 1/4 cup canola oil
Method

Step 1Preheat oven to 180C and lightly grease a loaf tin.

Step 2Peel bananas, place in a mixing bowl and mash.

Step 3Add the flour and then the remaining ingredients.

Step 4Mix well until combined and pour into the loaf tin.

Step 5Bake for 40 minutes until golden.

- 1 loaf pan
- 1 bowl
Recipe Notes
Use canola or rice bran oil.
The riper and blacker the bananas, the better.
I sometimes add a small amount of chopped walnuts for variety.
