If you need a quick, no-bake dessert to feed a crowd, this easy summer cheesecake log will please even the fussiest guests. Packed with a delicious cheesecake filling and topped with the freshest summer fruits, it tastes as good as it looks.
Ingredients
- 3 mangoes
- 250 g cream cheese room temperature
- 1/4 cup caster sugar
- 600 ml thickened cream
- 1/2 tsp vanilla essence
- 250 g Arnott's Granita biscuits
- 1/2 cup unsweetened orange juice
- 2 passionfruit
- 1 punnet fresh raspberries
Method

Step 1Slice cheeks from one mango and spoon out flesh into a food processor. Blitz to form a puree. Set aside. Reserve remaining two mangoes for garnish.

Step 2Wipe out bowl of food processor. Add cream cheese, caster sugar and 1/2 cup of cream, and blitz until smooth and well combined. Remove to a bowl and fold through mango puree.

Step 3In a separate bowl, whisk remaining cream with vanilla essence until thick.

Step 4Spread a long, thick rectangle of whipped cream onto your serving platter. Dip a Granita biscuit in orange juice then spread with cream cheese mixture. Stand upright at one end of whipped cream. Repeat with remaining biscuits, sandwiching them together with the cream cheese filling to form a log. Cover the log with remaining whipped cream, then place in the fridge to set for 2 hours or overnight.

Step 5When you are ready to serve, remove cheeks from remaining mangoes and use a large metal spoon to scoop out the flesh. Slice lengthwise into thin slithers. Drape over the top of the log and dot with raspberries. Drizzle over passionfruit pulp and serve.
Recipe Notes
Slice the log on the diagonal to get a pretty cross-section for serving.
You can use store-bought mango puree if you prefer, but use fresh mangoes for the garnish.
