These rum balls can't be missed at the Christmas, because every one loves them!
Ingredients
- 2 cup plain biscuits crushed
- 8 tbs brown sugar
- 2 cup almond meal
- 2 tbs cocoa powder
- 6 tbs rum essence
- 1 cup sultanas chopped
- 120 g unsalted butter room temperature
- 375 g dark cooking chocolate
Method

Step 1Mix the biscuits with sugar, almond meal, cocoa powder, rum, sultanas, butter well together, make a mixture and with hand create small balls. Put aside.

Step 2Finely grate the chocolate into a large bowl.

Step 3Coat each ball with the grated chocolate.

Step 4Keep them in plastic container in a fridge or freezer until serve.

Recipe Notes
If you keep them in a freezer,just before serving take it out and leave at room temperature they will be nice and just as fresh.
I normally use a brown Caribbean rum essence.
