Ingredients

  • 2 cup plain biscuits crushed
  • 8 tbs brown sugar
  • 2 cup almond meal
  • 2 tbs cocoa powder
  • 6 tbs rum essence
  • 1 cup sultanas chopped
  • 120 g unsalted butter room temperature
  • 375 g dark cooking chocolate

Method

  • Step 1
    Mix the biscuits with sugar, almond meal, cocoa powder, rum, sultanas, butter well together, make a mixture and with hand create small balls. Put aside.
  • Step 2
    Finely grate the chocolate into a large bowl.
  • Step 3
    Coat each ball with the grated chocolate.
  • Step 4
    Keep them in plastic container in a fridge or freezer until serve.

Recipe Notes
If you keep them in a freezer,just before serving take it out and leave at room temperature they will be nice and just as fresh. I normally use a brown Caribbean rum essence.
